Potatoes Fondant

Fondant comes from the word “melt.” These potatoes start in a skillet with water and a bit of butter and oil. When the water has evaporated and they are just about cooked, you crush them a little and transfer them to the oven so they continue to brown beautifully but stay very, very moist inside.
